How do you create an automated installation cd?

I am going to keep this very simple. I am a computer technician and I am constantly uninstalling old applications and reinstalling new ones. What I want to know is, is there any way I can create an automated cd that will perform the tasks I want? I want to basically just pop in a cd and have it do the specific tasks I do all the time. Please help me!
